This was a standard supper when the kids were growing up and they still love it today. It is a super simple one-pot meal that is quick to fix. Larry has absolutely perfected it over the years and we still have it every now and then. It always brings back good memories.
1 lb Ground Beef
1 Onion, chopped
1 Bell Pepper, chopped
1 to 2 Tbls Chili Powder
1 cup Rice
1 can Diced Tomatoes or Rotel Tomatoes, Medium for a little extra kick
1 can water
Brown the meat, add the chopped onion and bell pepper and cook. Add chili powder, rice, tomatoes and water. Simmer 30 minutes covered. Top with cheese.
