Sopapilla Cake

My daughter Melissa Pape introduced me to this cake and I’ve never made a cake as easy or delicious as this one! I substitute 3/4 cup of honey for the sugar because I like my sopapillas with honey.

2 cans Crescent Rolls

1 cup Sugar

1½ tsp Vanilla

2 8 oz boxes Cream Cheese, softened

1 cup Sugar

½ cup Butter (1 stick)

Cinnamon to taste

Cayenne to give it a little kick!!! (optional)

Pre-heat oven to 350 degrees. Grease and flour a 13” x 9” pan.

Place 1 can rolls in bottom of the pan. Flatten to edges and do NOT separate.

Mix cream cheese, sugar and vanilla with mixer. Spread over rolls. Place other can of rolls on top and do NOT separate. Melt butter, add sugar and stir. Spread on top and sprinkle cinnamon (mixed with a little cayenne – optional) across entire pan.

Bake for 30 minutes or until lightly browned. Crust will look like cinnamon toast – brown and crunchy.

Variations:

Substitute ¾ cup honey for the sugar.

Add 1 can Apple Pie Filling or you can substitute this for the cream cheese filling.
